Peach Apple pie

While grocery shopping on Tuesday, I ran across a bag of "manager's special" apples for $1.00. There were a few bruises, but generally they looked like prime pie suspects.


Owen and I set to work yesterday to make two pies; one for us and one to share with friends. Since there were not quite enough apples for two pies, we paired them with peaches we had in the freezer. Summer fruit meet Autumn deliciousness.... the perfect time of year for such a pie. Pie making is quite a job isn't it? I think from apple peeling to pulling them from the oven was about 3+ hours. But it was worth it for sure! The pie was delicious, and I am going to attempt to write down the recipe so you can enjoy this end of summer peach-apple pie.

The main filling was made using this recipe as a guide. Like I said, I used frozen peaches instead of canned, and probably 3 cups per pie. I cooked them down on the stove just a little, so they wouldn't make my pie too runny.

Then for the crust, I used my great-grandmothers recipe:
3/4 cup shortening or butter (I used half of each, making that 6T of each)
1 cup Whole wheat flour
1 cup All-purpose flour
1 tsp. salt
5 T ice cold water

Mix dry ingredients together.
Cut in shortening/butter
slowly add water mixing with a fork, then with hands to get desired consistency.

Makes 1 pie crust


and I did a crumb topping on this pie, using a recipe from one of my favorite cook book.

1 cup Oats
1/2 cup Whole wheat flour
1tsp salt
1tsp cinnamon
1/4 c oil
1/4 maple syrup

Mix it all together, and spread on your pie! This is a great universal vegan crumb topping.

I baked it with foil on for about 40min at 350, then maybe 15 - 20 more with foil off so the topping could brown.



Oh, and while I was busy making my dough, Owen made his. And loved it! The play-doh came out so nice and soft, and it was so rewarding for him to make his own.


The only trouble was when I wanted him to clean up his work area; he seems to have a little trouble with that. Wonder where he gets that?
